When the cold winter winds start to blow, there is nothing like a cozy candlelight, and a warm bowl of soup to warm the roots of the heart with best lentil soup recipe.

One ingredient that is particularly suitable for winter soups is green lentils. These little legumes are not only delicious but also incredibly nutritious.
During our first winter together in Iceland, Adrian cooked me a delicious soup that became my favorite and has truly been a hit with those who have tasted it, so I think it's appropriate to start my food blog by sharing it with you.
This soup is a typical winter soup in Spain and it is usually made with meat, since I was vegan at the time, he made the soup for me only with vegetables and I have stuck to it that way. I will post a recipe both vegan/vegetarian and with meat so everyone can just decide for themselves which will be the choice. Not complicated at all, the base is the same and only the meat is added.

Now let's put these green lentils to good use with a hearty and nutritious soup recipe. This soup is easy to make, full of flavor and perfect for all those cold winter days.

Ingredients: Without meat

1 cup green lentils
1 onion, finely chopped
2 garlic cloves, finely chopped
1 small green pepper
1 small red pepper
2 bay leaves
1 teaspoon cumin (not cumin)
1 tsp smoked paprika
2 dried peppers (remember to clean the core inside)
2 large carrots, diced
1 large baking potato, cut into cubes
1-2 large tomatoes, cut into cubes (you can use 1 can of canned tomatoes in pieces)
6 cups vegetable broth
or about a liter of water can be more /2 vegetable cubes
Salt and pepper to taste
Olive oil for frying
With meat:
200-300 g pieces of pork flank (pork steak, not with skin) Cut into cubes
1 Chorizo Spanish sausage (sliced)
about a liter of water can be more/1 vegetable and 1 beef cube
Directions: Without meat and with meat
Start by rinsing the green lentils under cold water and set them aside.

Heat a little olive oil over low heat in a medium-sized saucepan. Add the chopped garlic and onion and heat in the oil.
Then add the green and red parika, fry until it becomes soft.
Then add spices to the pot. Cumin, smoked paprika, bay leaves and also put dried paprika and heat for a minute or so, until the spices start to smell good in the kitchen.
Here we add pork side pieces and chorizo, leave the fat to mix with the spices and brown a little, but not at all like "crispy bacon".
It is also good to save Chorizo and fry it separately and have it like "crispy bacon" and put it on top of the soup, on each plate for flavor and taste.
Add the rinsed lentils and continue to heat for a while and allow the spices to mix well, then add the tomatoes and let them heat up a bit before adding the stock. Then the stock (water and stock) is added.
Bring to a boil, then lower the heat and simmer gently for 15-20 minutes.
While you wait, cut the carrots and potatoes (remember to peel both).
When about 20 minutes have passed, check if you need more water in the soup, sometimes the beans absorb well and then just add more water.
Then put the carrots and potatoes in and let it simmer for a total time of about 45 minutes or until the lentils are tender.

At the end, taste the soup if it needs more power, salt or pepper, because it all depends on each person's taste.
Serve hot, garnished with a drizzle of olive oil, sprinkled with fresh herbs and a slice of bread on the side.

Here are some swing points that you can try:
Fry pieces of chorizo and only use on top of the soup instead of adding it to it.
Put sour cream on top of it with fresh parsley.
Use a magic wand and puree part of the soup for those who don't want to eat chopped vegetables, and then remove the meat if it looks that way.
Puree leftover soup and use as bean dip with bread.
